Green shakshuka

We have a very green breakfast option - green shakshouka - perfect to boost your immune system and supplement essential minerals and vitamins thanks to its ingredients combination. There is kale, which contains antioxidants, wealth of minerals and omega-3 fatty acid called alpha linolenic-acid. There is iron, folic acid and vitamin A rich spinach, vitamin C rich parsley and of course eggs, which contain a little bit of almost every nutrient you need. All these nutritional benefits make this dish a must try for breakfast!
Ingredients:
- 1 zucchini
- 2 cups shredded kale
- 2 cups trimmed spinach
- 1 sliced onion
- 1 tablespoon lemon juice (from one lemon)
- 60g feta
- 30g pitted black olives
- 8 eggs
- 1 cup parsley leaves
- 250 ml olive oil
- 5 garlic cloves
Instructions:
